Equipment

Ingredients

  • 2 sticks unsalted butter room temperature
  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 2 eggs at room temperature
  • 1 tbsp vanilla extract
  • cups all purpose flour
  • 1 tsp baking soda
  • cup semi sweet chocolate chips
  • cup mini marshmallows
  • 1 tsp blue food coloring

Instructions

  •  Preheat the oven to 350°F. Line your baking sheet with parchment paper. In a large bowl, beat together the butter, granulated sugar and brown sugar on medium speed until soft and incorporated.
  • Add the eggs, one at a time, beating the mixture together after each one. Add in the vanilla extract and mix together once more.
  • Add the flour and baking soda. Mix on low until the batter is well combined, about 1 minute. Fold in the chocolate chips with a spatula.
  • Remove one cup of the batter and place it in a separate, small bowl. Place the bowl in the freezer to chill for 10-15 minutes. In the meantime, add the blue food coloring to the remaining cookie dough and mix it up with a spatula until the batter is an even blue color. You may want to add more if the color isn't bright enough.
  • To assemble the cookies (only do about 5 cookies per batch or sheet), start with taking about two hefty tablespoons of batter, and form it into a a somewhat flat and round cookie shape. Then take a smaller tablespoon of the regular colored cookie dough, and form it into a round ball. Press the ball gently into the blue cookie. Then take about a teaspoon worth of more blue cookie dough and stretch it over the regular cookie dough to cover it. Pinch the top and bottom blue layers of the cookie and seal the cookie together gently so that no brown cookie dough is still visible.
  • Add some marshmallows to the top of the cookie, pushing them gently into the dough so they stick. Avoid putting them on the sides of the cookie, as they are likely to melt and fall off.
  • Bake them in the oven for 8 minutes, and then remove them. Bang the pan on the counter a few times to ensure that they flatten out a bit. Then place back in the oven to bake for about 5 more minutes. The tops should look set and not mushy. Remove from the oven and let cool.
  • Bake another batch the same way if needed (if you only had one baking sheet). Enjoy!
