These cookies took me three tries, but I’m happy with them now! These cookie monster cookies are so fun to make, and they are perfect for birthday parties (or honestly if you have a child that likes anything blue). Full of chocolate chips and topped with toasted marshmallows, these are a delicious handful that don’t take long at all!

These cookies are meant to be large, so the recipe will produce about 10-11 cookies. You don’t have to make the cookies blue if you don’t want, but that’s the fun part! The middle of each cookie has the regular brown cookie dough shade, which is a fun little surprise.

Make the cookie batter

This is a pretty simple cookie dough recipe. Unsalted butter, granulated sugar and brown sugar get mixed together until smooth. Be sure to make your unsalted butter room temperature. If it’s still cold, pop it in the microwave for a 5 seconds to warm it up.

Then we just add eggs, vanilla extract, flour and baking soda. Once that’s all combined, we add in the chocolate chips gently. That’s it!

To make the colored batter, remove one cup of the batter and place it in a separate bowl. Place that bowl in the freezer to let it chill for 15ish minutes. This is important – we want this dough to be shapeable and easy to put inside each cookie, so the dough needs to firm up a bit.

In the main bowl, add the blue food coloring. Admittedly, I could only find the gel coloring that you actually put in frosting, which required about a whole teaspoon’s worth to turn the batter a nice blue hue. If you are able to get traditional food coloring, I would start with 3-4 drops and increase from there.

Assemble the cookie monster cookies

This part is hard to explain but it’s simple. We basically need to sandwich the blue dough with the brown dough in the middle. Take a small scoop of the blue, and create a small, flat round. Then make a tablespoon size ball of the brown dough (which should be firm from chilling) and place it in the center of the blue round. Then add some more blue cookie dough on top, stretching it out with your fingers to seal the top blue layer with the bottom blue layer.

Next, add the marshmallows! I tried baking the marshmallows in the batter…and it was not good. It made the cookies all blobby and sticky and not great. However, the marshmallows are amazing when you just add them on the top. This way, they brown in the oven and stay nice and bouncy. That said, place about 4-5 marshmallows on the surface of each cookie, pushing them in gently.

Bake them!

Place the cookies on parchment paper, fitting only about 5 cookies per baking pan so that they have plenty of room to spread out. Don’t crowd the sheet or else they will become one big lump.

And that’s pretty much it! Set them out to cool for at least 10 minutes before eating!

Ingredients

  • 2 sticks unsalted butter room temperature
  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 2 eggs at room temperature
  • 1 tbsp vanilla extract
  • cups all purpose flour
  • 1 tsp baking soda
  • cup semi sweet chocolate chips
  • cup mini marshmallows
  • 1 tsp blue food coloring

Instructions

  •  Preheat the oven to 350°F. Line your baking sheet with parchment paper. In a large bowl, beat together the butter, granulated sugar and brown sugar on medium speed until soft and incorporated.
  • Add the eggs, one at a time, beating the mixture together after each one. Add in the vanilla extract and mix together once more.
  • Add the flour and baking soda. Mix on low until the batter is well combined, about 1 minute. Fold in the chocolate chips with a spatula.
  • Remove one cup of the batter and place it in a separate, small bowl. Place the bowl in the freezer to chill for 10-15 minutes. In the meantime, add the blue food coloring to the remaining cookie dough and mix it up with a spatula until the batter is an even blue color. You may want to add more if the color isn't bright enough.
  • To assemble the cookies (only do about 5 cookies per batch or sheet), start with taking about two hefty tablespoons of batter, and form it into a a somewhat flat and round cookie shape. Then take a smaller tablespoon of the regular colored cookie dough, and form it into a round ball. Press the ball gently into the blue cookie. Then take about a teaspoon worth of more blue cookie dough and stretch it over the regular cookie dough to cover it. Pinch the top and bottom blue layers of the cookie and seal the cookie together gently so that no brown cookie dough is still visible.
  • Add some marshmallows to the top of the cookie, pushing them gently into the dough so they stick. Avoid putting them on the sides of the cookie, as they are likely to melt and fall off.
  • Bake them in the oven for 8 minutes, and then remove them. Bang the pan on the counter a few times to ensure that they flatten out a bit. Then place back in the oven to bake for about 5 more minutes. The tops should look set and not mushy. Remove from the oven and let cool.
  • Bake another batch the same way if needed (if you only had one baking sheet). Enjoy!
