Ingredients

  • cups all purpose flour
  • ½ cup applesauce unsweetened
  • ¾ cup honey crisp apple finely chopped
  • 2 eggs
  • ¼ cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp allspice
  • ½ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla
  • powered sugar for dusting
  • cinnamon for dusting

Instructions

  • Preheat the oven to 350°F. Grease a muffin pan with unsalted butter or oil. Or, fill the pan with liners.
  • In a bowl, mix together the eggs, vanilla, applesauce, and brown sugar - whisk until well combined.
  • Add in the flour, baking powder, baking soda, salt, cinnamon and allspice and whisk again until well combined.
  • Fold in the apple chunks. Do not over mix.
  • Fill each muffin tin evenly, about 3/4ths full. Bake in the oven for 15 minutes, or until a knife comes out clean when inserted into a muffin. Remove from the oven and let cool.
  • Dust muffins with powdered sugar and cinnamon if desired. Enjoy!
