Ingredients
1½cupsall purpose flour
½cupapplesauceunsweetened
¾cuphoney crisp apple finely chopped
2eggs
¼cupmaple syrup
1tspcinnamon
1tspallspice
½cupbrown sugar
1tspbaking powder
½tspbaking soda
1tspvanilla
powered sugarfor dusting
cinnamonfor dusting
Instructions
Preheat the oven to 350°F. Grease a muffin pan with unsalted butter or oil. Or, fill the pan with liners.
In a bowl, mix together the eggs, vanilla, applesauce, and brown sugar - whisk until well combined.
Add in the flour, baking powder, baking soda, salt, cinnamon and allspice and whisk again until well combined.
Fold in the apple chunks. Do not over mix.
Fill each muffin tin evenly, about 3/4ths full. Bake in the oven for 15 minutes, or until a knife comes out clean when inserted into a muffin. Remove from the oven and let cool.
Dust muffins with powdered sugar and cinnamon if desired. Enjoy!
