Easy Apple Maple Spice Muffins

These apple maple spice muffins are going to be the sweet snack for your Fall mornings. These muffins are moist, slightly sweet and filled with a light apple flavor. These apple maple spice muffins can be made in one bowl and in 30 minutes – hooray! Made with applesauce, Honeycrisp apple chunks, and REAL maple syrup (please don’t use Aunt Jemima or Log Cabin!!)

How to make the BEST apple maple spice muffins

Listen, I do not like to celebrate Fall early. Sweaters? No. Pumpkins – not yet. I live in a cold place. I don’t need that yet. BUT, I am okay with eating a few Fall flavored treats.

The combination of apple and cinnamon never gets old – I was inspired to make these after seeing Starbucks’ latest apple crisp drink! Apple pies are a close second, but I am really loving these snack-able apple muffin treats. These apple maple spice muffins are also dairy free, and no oil added. Instead, the applesauce helps make these nice and moist!

These are EASY! You are going to mix everything in a bowl! Go figure. Start with the wet ingredients, including unsweetened applesauce. This is important because we are adding brown sugar – so no need to go overboard on the extra sweetness.

What apples to use?

Use a Honeycrisp apple if you can – I’m sure we can all agree these are some of the best apples out there. These are also quite large apples, so if you do choose a different apple, you may need more than one for this recipe.

Other apples I recommend if you cannot use Honeycrisp:

  • Gala
  • Pink Lady
  • Fuji
  • Golden Delicious

Be sure to chop up your apple thoroughly. The chunks should be pretty small so that it evenly distributes in the batter.

What maple syrup to use?

Like I said before, we want quality maple syrup, from a real tree! Don’t use alternatives like Aunt Jemima or Log Cabin, which is NOT real maple syrup – it is mostly high fructose corn syrup.

Look for “Grade A” maple syrup, which typically has a strong and dark flavor. Grade A is the the most robust and maple-packed of all the grades of syrups, providing the best flavor in my opinion. The only ingredient on the back should just be..MAPLE SYRUP 🙂 Trader Joe’s, Coombs, and Thrive Market are all good choices.

How to store and reheat your apple maple spice muffins

You can leave your muffins out for a day in an air tight container, but after that, store them in the fridge and consume in 2-3 days! Trust me, you do not want your muffins to get moldy! To reheat, just pop them into the microwave for 20 seconds.

To freeze: If you don’t think you will consume all of your muffins, freeze them! Place them in a freezer bag and place them in the freezer. Before consuming, remove from the freezer and let them defrost for an hour or so. Then pop it in the microwave or the oven at 350 degrees for 10 minutes.

Other muffin tips

  • Grease your muffin pan – if you don’t have liners, just grease your tins well. Brush on a light amount of canola or olive oil in each pocket. Or you can add cold chunks of butter to each pan, stick it in the warming oven for 2 minutes, and smear the melted butter evenly on all sides. Use a butter knife to help you gently remove the cooled muffins when they are finished.
  • If you do not fill all of your muffin tins – you should fill all 12 with this recipe. However, if for some reason you do not, fill any empty tins with some water to prevent your pan from warping in the oven.
  • Don’t whisk in the apple chunks – switch to a spatula when folding in the apple to avoid your whisk from getting clogged.
  • Don’t fill the muffin tins to the brim – they should be 3/4ths or less full!
  • Add a dusting – for extra sweetness, sprinkle on powdered sugar and cinnamon!

Ingredients

  • cups all purpose flour
  • ½ cup applesauce unsweetened
  • ¾ cup honey crisp apple finely chopped
  • 2 eggs
  • ¼ cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp allspice
  • ½ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla
  • powered sugar for dusting
  • cinnamon for dusting

Instructions

  • Preheat the oven to 350°F. Grease a muffin pan with unsalted butter or oil. Or, fill the pan with liners.
  • In a bowl, mix together the eggs, vanilla, applesauce, and brown sugar – whisk until well combined.
  • Add in the flour, baking powder, baking soda, salt, cinnamon and allspice and whisk again until well combined.
  • Fold in the apple chunks. Do not over mix.
  • Fill each muffin tin evenly, about 3/4ths full. Bake in the oven for 15 minutes, or until a knife comes out clean when inserted into a muffin. Remove from the oven and let cool.
  • Dust muffins with powdered sugar and cinnamon if desired. Enjoy!
