If you have a cast iron skillet, I highly suggest you try this giant chocolate chip skillet cookie. It’s a huge, gooey dessert that everyone can dive into, just like the kind of skillet cookies you get at a restaurant. Not to mention, a great dessert for a date night or for Valentine’s Day coming up. And it’s so easy! Just dump everything into the skillet and throw it into the oven.

Chewy, golden outside, a gooey and soft inside, melted chocolate chips and flaky sea salt. Plus…vanilla ice cream!

Well…you need a cast iron skillet. For this recipe, I used my 12 inch cast iron from Staub, called the Everything Pan, linked here. This pan is amazing and I truly use it for everything. Plus, the 12 inch skillet produces a 12 inch cookie…THE GOAL.

You will also need a large bowl and a whisk.

You don’t cook this cookie on the stovetop (I actually thought this the first time I wanted to make this). We bake it in the oven! I love this recipe because it’s one bowl, one skillet, and doesn’t require you to dirty much else.

  • Add a vanilla bean for extra flavor – vanilla beans are pricey so feel free to skip this if you want. However, a fresh vanilla bean provides a warmer and fuller taste.
  • Don’t over mix your cookie dough – The batter will be thick once the dry ingredients are added. Only mix the batter until it’s just combined and the flour appears absorbed.
  • Add a mixture of chocolate – dark chocolate is always my favorite, but I also mixed in some butterscotch chips which are also delicious.
  • Don’t over bake the cookie – I found about 22-24 minutes was the ideal amount of time in the oven. It’s hard to tell, so keep in mind that the outer edges will have a golden perimeter and will feel pretty firm, while the middle will be still soft a gooey. THAT’s OK. It will firm up as it cools. Plus, a soft cookie center will be great for your spoons to dive into.

You can either slice your cookie up into segments and transfer them to a new container, or you can just leave the cookie in the skillet and cover it with saran wrap. Leave it at at room temperature or place it in the fridge. Eat it within 2-3 days!

Equipment

Ingredients

  • 10 tbsp unsalted butter melted
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 2 cups flour
  • 1 tbsp vanilla extract
  • 1 vanilla bean optional
  • 1 tsp corn starch
  • ½ tsp baking powder
  • ½ tsp salt
  • cup chocolate chips or butterscotch chips
  • flaky sea salt optional
  • vanilla ice cream optional

Instructions

  • Preheat the oven to 350F°. Grease your skillet with butter or oil.
  • In a bowl, whisk together the melted butter, granulated sugar and brown sugar until well combined.

  • Add the vanilla extract, vanilla bean and eggs. Whisk together until smooth.

  • Add in the flour, corn starch, baking powder and salt. With a spatula, stir the batter until the flour appears absorbed. It will be a bit thick.
    2 cups flour, 1 tsp corn starch, ½ tsp baking powder, ½ tsp salt
  • Fold in the chocolate chips and butterscotch chips.

  • Dump the batter into the skillet and press it evenly into the pan. Sprinkle it with flaky sea salt.

  • Bake it in the oven on the middle rack for 22-24 minutes. It will be golden on the edges and still pretty soft near the middle. Allow it to cool for 10-15 minutes before serving. Top with ice cream and dig in!
