Loaded Chili Cheese Dip

Ingredients

  • 2 tbsp olive oil
  • ½ lb lean ground turkey
  • ½ yellow onion diced
  • 1 red bell pepper diced
  • 1 cup black or pinto beans or a mixture!
  • 1 cup diced tomatoes canned or fresh
  • 3 oz cream cheese
  • 1 tsp chili powder
  • ½ tsp cumin powder
  • salt and pepper
  • ½ cup water
  • 1 cup sharp cheddar cheese shredded
  • ½ cup pepperjack cheese shredded
  • green onions for topping
  • cilantro for topping
  • sour cream for topping
  • tortilla chips for serving

Instructions

  • Preheat the oven to 400℉. In a cast iron skillet, add the olive oil over medium high heat. Then add the onion and red pepper and cook until softened and browned, five minutes.
    ½ yellow onion, 1 red bell pepper, 2 tbsp olive oil
  • Then add the ground turkey and cook until no pink remains. Add the cumin, chili powder, salt and pepper.
    ½ lb lean ground turkey, 1 tsp chili powder, ½ tsp cumin powder, salt and pepper
  • Then lower the heat to medium and add the beans, cream cheese and tomatoes. Add ½ cup of water and let everything melt and simmer for 5 minutes.
    1 cup black or pinto beans, 1 cup diced tomatoes, 3 oz cream cheese, ½ cup water
  • Top the mixture with cheese and bake in the oven for 15 minutes until golden. Remove from the oven and let cool for 5 minutes. Then top the dip with chopped green onions, sour cream and cilantro. Then dip away!
