White Wine Chicken with Red Plums and Farro

Maybe you’re thinking: plums and chicken? But these red plums make a fabulous addition to a white wine sauce that is both light and easy to make. Paired with farro and mascarpone, this white wine chicken with red plums is a delicately sweet dish that comes together in 30 minutes.

You know I love my chicken recipes and this one is definitely getting added to my summer repertoire. If you are a fan of bruschetta chicken, this is sort of like that but with a fun twist.

What wine works for white wine chicken?

I’m not picky – any Pinot Grigio will work great (once again, I used Charles Shaw brand from Trader Joe’s) but a Sauvignon Blanc can substitute if needed. Don’t use anything too sweet like a Moscato, since we don’t want the wine to be overpowering in this dish.

What kind of plums should I use?

Originally, I was at the store looking for peaches for this, but they didn’t have any, so I went with plums and it turned out great. For this, I recommend red plums, which tend to be more tart and sour than black plums, which are much sweeter.

The mascarpone cheese farro

Mascarpone cheese is a guilty delight that is SO GOOD – it is like cream cheese but better. The only difference between the two is that mascarpone is made with heavy cream, while cream cheese is made with whole milk. So it is quite thick.

Melted mascarpone cheese is a delicious sauce when melted on pasta, rice, and any kind of grain. AND it’s one ingredient! So just throw some on your hot farro and it’s ready to serve.

I like Murray’s Mascarpone or BelGioioso Mascarpone the best!

What to serve with your white wine chicken:

I ate this dish all on it’s own, but if you need some sides to pair with it, I’d recommend:

  • roasted Brussel sprouts
  • oven baked broccoli
  • roasted fingerling potatoes

Do I need to use a Dutch Oven?

No, if you don’t have one, you don’t have to use it. You can make this meal in a large pot and just skip the final step of roasting it in the oven for five minutes. If you choose this route, I recommend popping in the plums when the wine is simmering, so that some of their juices can be released into the sauce. Or – use a large cast ironed pan or skillet if it’s big enough to hold all of the liquid!

White Wine Chicken with Red Plums and Farro

Equipment

  • Medium dutch oven
  • spatula or large spoon
  • sharp knife

Ingredients

  • 4 lean chicken breasts
  • cup white onion chopped
  • 2 tbsp olive oil
  • ¼ cup parsley roughly chopped
  • cup cherry tomatoes halved
  • 1 cup Pinot Grigio
  • 2 red plums sliced
  • 8 oz farro
  • 4 tbsp mascarpone cheese
  • salt and pepper

Instructions

  • Preheat the oven to 425°F. Add the oil to a dutch oven and warm over medium heat. Toss in the onion and sauté for 2-3 minutes until slightly browned.
  • Raise the heat to medium-high and carefully lay the chicken into the pot. Add a pinch of salt of pepper to the chicken. Add in the tomatoes and the parsley. Let the chicken brown and then flip to the other side. Brown until all sides appear golden, about 7 minutes.
  • Bring the heat down to low and add the Pinot Grigio. Allow the chicken to simmer for another 5 minutes.
  • Arrange the plum slices around the chicken. Take the Dutch oven and place it in the oven (uncovered) to cook for 5 minutes, or until the plums look slightly browned and the chicken looks crisp. Remove from the oven and let cool.
  • In the meantime, prepare the farro. Follow package instructions or boil a few cups of water in a pot. Add in the farro and cook for 10 minutes. Remove the farro from the heat and pour out the farro into a strainer. Add the farro back into the pot and while it is still warm, add the mascarpone cheese. Stir it continuously until it has melted evenly.
  • To serve, plate a few scoops of farro and top with a chicken breast and the white wine sauce. Enjoy!
