Another easy, healthy, (almost) one pan dinner that requires very low effort: one pan chicken with carrot hummus. Hummus MIGHT sound like an odd pairing with chicken and vegetables but I DISAGREE. It’s a fabulous, light but filling addition that can be thrown together very quickly.
This dish also has cooked quinoa, roasted asparagus, red pepper and roasted garlic. YUM!
What you need to make one pan chicken with carrot hummus
Luckily, you don’t need much!
- A large sheet pan – Here’s my favorite sheet pan I’ve ever used from Williams Sonoma. I use the “half sheet” size, which was big enough for this recipe.
- Medium saucepan – I like to use a saucepan to cook quinoa, similar to this one. Make sure you have a cover!
- Food processor – very important to make our hummus, like this one. You can also use a blender.
How to make carrot hummus
Carrot hummus is a lot like regular hummus, but with roasted carrots! Here’s what you need to make it happen
A bunch of baby carrots – or, a few normal sized carrots. It’s easier to buy a bag of baby carrots (in my opinion), but either way works. Roast them and let them cool!
A can of chickpeas – be sure to drain them!
Roasted garlic – to make it easier, cut the very tips off the garlic cloves before you roast them. This will make them easier to peel when they are done.
Tahini – to give it a nutty flavor and a thicker consistency!
Lemon juice – half a lemon works for this!
Olive oil – to bring it allllll together.
Just pulse it all together until smooth.
How to make quinoa
The back of most quinoa bags will tell you how to make it, but here’s my biggest tip: Add two parts water to one part quinoa. (So 2 cups of water for 1 cup of quinoa). This will ensure that there is enough moisture in the pot for the quinoa to soak up – and not burn! Bring the quinoa and water to a boil and then bring it down to simmer. Cover it with a lid, and wait about 10 minutes.
How to keep you asparagus fresh
I learned a trick on how to keep asparagus fresh after you buy it from the grocery store, so I’m going to share it here! Trim off the very ends of the asparagus and place the stalks in a jar or small vase filled with 1-2 inches of water. Place a baggie (like the produce baggies from the store!) over the top of the asparagus and place the jar in the fridge. This trick has prevented my asparagus from getting slimy!

One Pan Chicken with Carrot Hummus
Equipment
- 1 Sheet pan at least a half sheet
- 1 Food processor
- 1 medium saucepan
Ingredients
- 1 lb chicken breast
- 1 lb asparagus
- 1 red pepper cored and sliced
- 4 garlic cloves
- 1 cup quinoa
- ½ a lemon
- 15 baby carrots
- 2 tbsp tahini
- 1 can chickpeas drained (15 ounces)
- 1/4 cup olive oil plus more for drizzling
- salt
- pepper
- red pepper flakes
Instructions
- Preheat the oven to 350°F. On a sheet pan, arrange the chicken, asparagus, red pepper, carrots and garlic cloves. Feel free to leave the skin on the garlic for now. Drizzle everything evenly with some olive oil and a pinch of salt and pepper. Use your hands to coat the veggies and chicken.1 lb chicken breast, 1 lb asparagus, 1 red pepper, 4 garlic cloves, 15 baby carrots
- Place the sheet in the oven and roast everything for 35-40 minutes. The chicken should be cooked through and the carrots should be soft. Let the veggies cool for a couple minutes.
- In the meantime, make the quinoa. In a saucepan, add 2 cups of water and 1 cup of quinoa. Bring the water and quinoa to a boil, and then bring it to simmer. Cover the pan and continue to simmer for 10-15 minutes, until the quinoa is fluffy and the water is absorbed.1 cup quinoa
- Make the hummus. In a food processor, add the chickpeas, carrots, peeled garlic cloves, a pinch of salt, lemon juice and tahini. Pour in the olive oil and pulse the food processor until the hummus is smooth.½ a lemon, 2 tbsp tahini, 1/4 cup olive oil, salt, pepper, 1 can chickpeas
- Plate your chicken with quinoa, carrot hummus and the vegetables. Top with red pepper flakes if desired.red pepper flakes
