Loaded Chili Cheese Dip

This loaded chili cheese dip is the perfect dip for football season and Super Bowl Sunday (tastes good for other sports, too). This dip has everything you love about chili: ground meat, beans, bell peppers and warm spices. It’s covered with cheese and baked in the oven until golden, dippable and ready to party.

Equipment needed for loaded chili cheese dip

  • A cast iron skillet – we prepare the chili in the pan and then shove it in the oven to finish. I use one from Staub.
  • A sharp knife – to chop our onion and bell pepper.
  • A cutting board – again, to chop!
  • A spoon or large spatula – to mix and cook our chili

Ingredients needed for loaded chili cheese dip

Here’s what to add to your grocery list:

  • olive oil – to grease our pan
  • ½ lb lean ground turkey – I usually buy one pound and save half for later. You can also substitute ground chicken or beef.
  • a yellow onion
  • a red bell pepper
  • A cup of black or pinto beans – you can use a mixture. I actually used a Somos Foods Pinto & Black Bean packet, and it was a delicious add.
  • diced tomatoes – canned or fresh works.
  • cream cheese – we only need 3 ounces, so save the rest for later.
  • chili powder
  • cumin powder
  • salt and pepper
  • sharp cheddar cheese and pepperjack cheese – you can use a mixture of cheeses, but this is what I had on hand and it was delicious.
  • green onions – for topping, optional.
  • cilantro – for topping, optional.
  • sour cream – for topping
  • tortilla chips – for serving. Don’t forget them!

How to make loaded chili cheese dip

Let’s make it together!

Step 1

Preheat the oven to 400℉. In a cast iron skillet, add the olive oil over medium high heat. Then add the onion and red pepper and cook until softened and browned, five minutes.

Step 2

Then add the ground turkey and cook until no pink remains. Add the cumin, chili powder, salt and pepper.

Then lower the heat to medium and add the beans, cream cheese and tomatoes. Add ½ cup of water and let everything melt and simmer  for 5 minutes.

Step 4

Top the mixture with cheese and bake in the oven for 15 minutes until golden. Remove from the oven and let cool for 5 minutes. Then top the dip with chopped green onions, sour cream and cilantro. Then dip away!

Storage

I like to serve it in the cast iron while it’s hot. If you have leftovers, I recommend scooping it into an airtight container and keep refrigerated. Consume within 3-4 days.

  • ½ cup pepperjack cheese shredded
  • green onions for topping

Instructions
