Summertime means Farmer’s Market berries, so I put them to good use with these brie and berry tarts! Puff pastry topped with melted brie and a mixture of strawberries, blueberries, vanilla, sugar and lemon. They’re crispy, sweet and a perfect pairing for vanilla ice cream! It’s like a toaster strudel, but fancier.

Equipment needed for brie and berry tarts

Here’s what you need to make these brie and berry tarts:

  • A large baking sheet – to bake our pastries. I use the Williams Sonoma Gold Touch line.
  • parchment paper – it’s important to line a baking sheet with parchment paper. Keeps everything from sticking!
  • A rolling pin – to roll out our puff pastry.
  • A small bowl – to make our berry mixture.
  • 1 sharp knife
  • A pastry brush – this is optional. You definitely could use your fingers or a spoon.

Ingredients for brie and berry tarts

Here’s what to add to your grocery list:

  • fresh blueberries – you can also substitute blackberries or raspberries.
  • fresh strawberries
  • A lemon – we need both zest and juice.
  • cornstarch – this will thicken our fruit mixture.
  • granulated sugar
  • vanilla extract
  • puff pastry – I used Pepperidge Farm brand, which is high quality. Each package comes with two sheets. You only need one for this recipe, so save it in the freezer for something else (or double up on this recipe!).
  • A wedge of brie cheese – We need about 6 slices of cheese, so a small wedge works. You can skip the cheese if you prefer all together, but it provides a nice creamy texture.
  • An egg – we will beat the egg and brush it onto the puff pastry so that it bakes golden brown.
  • heavy cream – to seal our pastries together. You could also use egg wash instead.
  • all purpose flour – just to dust a work surface! This will keep our puff pastry from sticking to the counter.
  • vanilla ice cream – for serving. Tastes best this way.

How to make brie and berry tarts

Let’s make them together!

Step 1

Make the berry mixture. In a small bowl, add the blueberries, strawberries, lemon zest and juice, vanilla, cornstarch and granulated sugar. Toss with a spoon.

Step 2

Prepare the pastry. Lightly flour a work surface. Unroll your puff pastry sheet – it should be cold but not frozen solid. If it feels mushy, put it in the fridge to firm up a bit more. Use the rolling pin to roll it out to ¼ inch thick. Slice the pastry into six even rectangles.

Step 3

Preheat the oven to 400℉. Line a baking sheet with parchment paper and space out the puff pastry rectangles.

Step 4

Prepare tarts. Add a slice of brie to the center of each tart. Top with a hefty spoonful of the berry mixture, leaving a small border around all edges.

Step 5

Fold and seal. Dab some cream on the puff pastry edges to help them stick. With your hands, fold the sides of the pastry over to seal the tarts on all edges.

Step 6

Bake! Brush the egg wash on exposed pastry so that it browns in the oven. Place the tarts in the center of the oven and bake for 20 minutes. Remove and let cool for 5-10 minutes. Enjoy with a scoop of ice cream!

Storage and Reheating Suggestions

These brie and berry tarts need to be consumed quickly – within 2-3 days. Place them in an airtight container and refridgerate.

To reheat, preheat the oven to 350 F degrees and place the tarts on a baking sheet. Put them in the oven for 4-5 minutes to heat up.

I would avoid putting them in the microwave – that will spoil the texture! You can also enjoy them chilled.
