If you have ever been to Milk bar…then you know how good it is. I love the cakes and the cookies, and I think the colorful branding is cute. However, if you’ve ever tried to look up one of those recipes – they are ridiculous. I’m talking 30 ingredients and an all day affair. I did it once. Unsure if I can again. Enter: these very easy vanilla birthday cake blondies.

These cake blondies are a budget-friendly treat, and they are just as cute to look at. AND, they take 10 minutes to prep before a quick trip in the oven.

What you need to make vanilla birthday cake blondies

What you need: an 8 inch square brownie pan, like this one. This is a square pan, which creates sightly thicker blondies since it’s less surface area.

Also, you’ll need a medium mixing bowl, a spatula and a whisk.

Tips for making Vanilla Birthday Cake Blondies

I hate to admit it, but I made this tray yesterday and we only have 2 left! They are addicting, warm and a little sweet. So biggest tip: try not to eat all of them?

But actually, these are so easy!

  • Don’t skip on the parchment paper – these blondies are soft and cakey, and they will not come out in nice squares without parchment paper. This way, you can lift them right out of the pan before slicing.
  • Use a spatula when to mix in the sprinkles – the sprinkles will get stuck in a whisk and will be annoying to fish out.
  • Keep an eye on the oven – the blondies should be a bit golden but not too dark. Use the knife technique by inserting one right in the center like you would a cake.

How to store your vanilla birthday cake blondies

Put them back in the pan and cover them with plastic wrap. Or put them in an air tight container and leave them at room temperature. Eat them within 4-5 days!

Equipment

  • 1 8 inch square pan
  • 1 medium mixing bowl
  • 1 Whisk
  • 1 spatula

Ingredients

  • ½ cup unsalted butter melted
  • 1 cup light brown sugar
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • tsp salt
  • ¼ cup rainbow sprinkles plus more for topping

Instructions

  • Preheat the oven to 350°F. Line the pan with parchment paper and grease it with butter or oil.
  • In a mixing bowl, whisk together the melted butter, eggs, sugar and vanilla. Once incorporated, add in the flour, salt and baking soda and continue to mix together with a spatula until all lumps are gone.
    ½ cup unsalted butter, 1 cup light brown sugar, 1 tbsp vanilla extract, 2 eggs, 1 cup all-purpose flour, 1 tsp baking soda, ⅛ tsp salt
  • Fold in the sprinkles gently. Once complete, empty the batter into the pan. Throw additional sprinkles on top to your liking.
    ¼ cup rainbow sprinkles
  • Bake the pan for about 20-25 minutes or until a knife inserted comes out clean. Let the pan cool for 20 minutes before removing the blondies from the oven and cutting them into squares. Eat them before they’re gone!
