Easy Plum Peach Popsicles

Okay these peach plum popsicles are only 4 ingredients (plus water) so these are an ultimately simple treat. The best part – you can probably use whatever fruit you want if you don’t have peaches or plums.

I LOVE popsicles and we ate these so quickly. Popsicles have a connotation of being unhealthy, but they are pretty low-calorie since they are fruit….and water. I did put sugar in them but life is short people.

I made these popsicles because I had some fruit that was starting to get….wrinkly. No one likes to eat peaches that have lost their luster, but it’s a shame to toss them out. So blend them instead!

Don’t peel your fruit!

No need to peel off the peach and plum skins – that’s where all the fiber and vitamins are! Plus, we are going to blend them into liquid, so there won’t be any chunks present. Slice your fruit, take out the pits, and give it a rough chop. Trust me, it’s so much better than a store bought treat.

I used a food processor, but a blender will definitely work too. Pulse until smooth and then add in the lemon, water and some granulated sugar. The water is key to make the popsicles freeze well, so don’t skip that part!

NOTE: I used 4 smaller peaches and plums, so if you have larger fruit, it might make more popsicles than expected.

Give your popsicles a spike

Want to make them boozy? Me too! You can add a shot of vodka, rum or whiskey (Jack Daniel’s is great with peaches!) Just don’t add too much alcohol or your popsicles could take longer to freeze.

How to freeze your popsicles

I have an instant popsicle maker, which I love! My mom gave it to me for my birthday a long time ago. It’s called a Zoku Quick Pop Maker and it really does work – instant popsicles in 10 minutes!!

However, traditional popsicle molds work too – but you will have to wait much longer for your popsicles to freeze solid. Here are some options I like:

If using traditional popsicle molds, be sure to let them freeze for about 4 hours before removing. To store, just place them flat into a freezer bag and lay them in the freezer.

Equipment

Ingredients

  • 2 peaches very ripe, roughly chopped
  • 2 black plums very ripe, roughly chopped
  • 1 lemon juiced
  • ยผ cup granulated sugar
  • ยฝ cup water

Instructions

  • Slice and core the peaches and plums. Add them to a food processor and pulse until the fruit has no lumps.
  • Add in the lemon juice, sugar and water and pulse once more until the mixture is well combined.
  • Pour the juice into popsicle molds evenly, ensuring that they don't overflow. If using an instant popsicle maker, be sure to insert the sticks before pouring and then wait 15 minutes to freeze before removing. If using traditional molds, place in the freezer for at least four hours before removing from molds.
  • If using an instant pop maker, remove carefully. If using traditional pop molds, fill a sink with hot water and immerse the mold into the water (but don't have the water touch the lip!) for a few seconds. Then pull them out.
  • Enjoy! Place in freezer bags and lay flat in the freezer.
