Honey Whiskey Almond Bread

I’ve seen a lot of treats involving caramel and bourbon, but a couple weekends ago I only had some Tennessee Honey Whiskey and I thought – this would probably be GREAT too.

This bread is definitely sweet and has a cake-like texture. It’s the perfect dessert to have with a cup of tea and it’s very easy to pack up to bring to a friend’s house.

With a sprinkle of cinnamon, all spice and clove, it definitely has a warm kick and has a VERY Autumn taste. Soft and sweet with toasted almond, my friends really enjoyed this one after a cold afternoon.

This recipe is quick and can get shoved in the oven pretty fast. Talk about delicious oven smells too!

What you need: An electric mixer, mixing bowls, and an 8×8 square inch pan.
Time: 25 minutes plus 40-45 to bake
Makes: One wide loaf of bread

Ingredients:

  • 1 cup of canola oil
  • 3 1/2 cups of all purpose flour
  • 1/4 cup of honey
  • 1 1/2 cups of granulated sugar
  • 1/2 cup of light brown sugar
  • 3 eggs at room temperature
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of baking powder
  • 1 teaspoon baking soda
  • 5 teaspoons of cinnamon
  • 1 teaspoon of clove
  • 1 teaspoon of all spice
  • 1 teaspoon ginger
  • Zest and juice of one orange
  • 1/4 cup of whiskey (I used Jack Daniel’s Tennessee Honey Whiskey)
  • 1/3 cup of toasted, sliced almonds
  • A pinch of salt

Directions:

Preheat the oven to 350 degrees and prep your square pan with parchment paper.

With an electric mixer, mix together the oil, granulated sugar, brown sugar, honey, eggs, orange zest and vanilla until combined, 1-2 minutes. In another bowl, combine the flour, baking powder, baking soda, cinnamon, salt, clove, ginger, and all spice and mix together with a spatula.

Combine the orange juice and whiskey in another small bowl. With the mixer on low, alternate the flour and liquid mixtures into the oil mixture in thirds (flour, whiskey, flour, whiskey, flour, whiskey) until all combined.

Pour the batter into the prepared pan and spread evenly. Sprinkle the almonds evenly across the top.

Bake for about 45 minutes, or until a knife inserted in the center comes out clean. Let cool for 10-15 minutes and enjoy warm! Wrap in saran wrap and save for up to five days.
