Banana Bread Baked Oats recipe for one – super easy and can be vegan! I am not kidding when I tell you that I have been making this recipe at least twice a week for an easy and warm breakfast. Banana bread is one of my favorite treats, but I hate having to wait for my bananas to turn brown. This is a healthy alternative that takes five minutes to prep and mimics this tasty treat! Plus, it’s just for one, so no need to worry about leftovers.

What these oats taste like

The texture of these oats is like soft but hearty pudding. The chocolate is nice and melty and makes everything a bit gooey. These oats are NOT crunchy but they are also not soggy. These oats are soft, moist and warm.

How to make banana bread baked oats

  • Use only half a banana – I know, that means you have half a banana leftover. I honestly just eat it, or you can slice it up and put it on top of your baked oats when they are done.
  • Use old fashioned rolled oats – I get mine in a big bag from Trader Joe’s! I like how filling these oats are! THESE ARE NOT steel cut oats. Those oats would require a longer baking time and more milk.
  • Add milk – I have made these oats with Willa’s Oat Milk (which is my favorite) or almond milk. Non dairy works best for this!

Other toppings for banana bread baked oats

Chocolate banana bread baked oats are my FAVORITE, so I added dark chocolate chunks (use vegan chocolate if you want). I also included pecans, but you can include other toppings like:

  • Raspberries
  • Figs
  • Blueberries
  • Almonds
  • Walnuts
  • Nutmeg
  • Allspice
  • Maple Syrup

Equipment

Ingredients

  • ½ banana mashed
  • ¼ cup plain rolled oats
  • ¼ cup oat milk or almond milk
  • pinch of cinnamon
  • handful of pecans chopped
  • handful of dark chocolate chips

Instructions

  • Preheat the oven to 350°F. Mash the banana into the bowl with a fork until it is soft.
    ½ banana
  • Add in the oats, cinnamon, chocolate chips and pecans. Stir.
    ¼ cup plain rolled oats, pinch of cinnamon, handful of dark chocolate chips, handful of pecans
  • Add the oat milk and stir.
    ¼ cup oat milk
  • Bake in the oven for 25 minutes. Remove and let cool for 5 minutes before eating.
